I noticed that our local super markets have fresh peaches in their ads this week. If they are not in your area yet, please copy and keep this recipe on hand for when you pick them off the trees! I would like to share my favorite NO-BAKE Peach Pie Recipe and another very healthy recipe with you for this hot summer. I entered this Peach Pie in the local County Fair. Even though it did not win 1st Place, it was auctioned off for $20 and I got a job offer to bake and manage a Pie Shop!
Several of you tried my Strawberry Pie recipe and liked it very much. Some say this one is even better.
PEACH PIE WITH A SURPRISE
9" baked pie shell (or larger) 3 C. Fresh Peaches, pealed and sliced
Mix dry ingredients together, add water, bring to a boil over medium heat. Boil until mixture starts to thicken. Remove from heat. Cool while making bottom layer.
4 oz cream cheese (room temp.) 4 oz. Cool Whip
Whip cream cheese and cool whip together until smooth. Spread on bottom of baked pie shell.
Layer sliced peaches over this layer. If glaze is thin, finish filling pie shell with peaches. Pour lukewarm glaze over fruit and refrigerate pie. (The glaze keeps the fruit from turning brown.
This pie could be made with any berries or fruit that has the same Jell-O flavor. Before there was Cool Whip, I use to make this with Whipped Cream.
**FOR A DIABETIC, substitute white grape juice for sugar and water in glaze or diet 7-Up and use sugar free Jell-O.
The bottom layer is great under canned apple, cherry or any pie filling for a FAST delicious Pie. Adjust sugar to personal taste
A hometown Friend of mine named, Hazel, sent me the following which sounds wonderful for a hot day. It's also a healthy choice for your children
SOFT SERVE - HEALTHY
Peel 4 bananas and place in plastic bag and freeze (I found they blend better if you break them in quarters)
After frozen place in blender and add 1 cup of fresh fruit or any of the following:
1 apple cored, 1 container of yogurt, can of fruit cocktail drained or 1 cup of fresh fruit of your choice.
Place frozen bananas in blender and add your choice of what you want. When blended it will look like soft serve ice cream. I did mine with some canned peaches as I didn't have any fresh fruit on hand and I was shocked to find it was good.
